Maker's Private Reserve - 2024 Vintage
Produced here at the ranch, these releases are the epitome of Michael Passmore’s work in caviar each season. Now released in extremely limited drops, the current offering is from our very first sturgeon harvested (TFP1259) for the 2024 season, is limited to only 1559 grams in total, and is guaranteed to sell out just as the earlier releases have.
"Earlier this year, on January 9th of this year, as I was making this caviar, it stood out to me as something I wanted to set aside and go back to after it had aged a bit, because the roe is larger than typical for the level of maturity presenting, and has more pop present. This led me to surmise that this fish's roe would be unique, and I was correct. The result is a mid level of maturity, not overly rich or savory, with a brilliant dark hue accentuated by the developing yolk's golden yellows, and an ever so pleasant burst of flavor from a distinctly individual pearls that burst with delicate pressure. I chose this for this release as I feel that it surpasses our normal specification for our PASSMORE Ranch Premier caviar, truly the epitome of it."

Each of these offerings is a single batch caviar, from a single fish. Its roe harvested at the exact moment of maturity, providing an optimal base of protein and fat for curing, indicated by a nuttiness when tasted raw. To cure this caviar, we use only pure sea salt to amplify the rich and complex flavors this caviar is known for, and then we allow it to age. When finished, a sublime pop from a structure that is neither too rigid, nor light, the pearls burst easily against across your palate with a rich, almost creamy and savory flavor enhanced by a malossol salinity.
